Our Process

The Process

Kombucha can be brewed in many ways. We have adopted clear guiding principles in our brewing. We brew authentically and slowly, from the four key traditional elements of kombucha; water, tea, SCOBY (symbiotic culture of bacteria and yeast) and an energy source for the SCOBY to ferment, sugar.

Our Ingredients

Firstly, our water is a relatively soft water from the wonderful granite mountains of Mourne. We treat it with a three-step filtration system at the brewery mainly to remove the added chlorine from inhibiting our precious SCOBY.

Secondly we use wonderful loose leaf tea.  Tea is such an under-rated commodity in the west.  Rarely do we ever understand or enjoy the huge diversity in tea from all over the world. We’re cray about good tea.

Third, our kombucha SCOBY is a culture that we have cultivated from a home brewed strain for many years. We do what we can to keep it consistent and true to type and producing the lovely mixture of organic acids that we have come to associate with our brand.

Finally, to feed the SCOBY we primarily make life easy for it and use a clean, refined beet sugar. This doesn’t impart unwanted flavours and lets the tea and culture do the talking. Unless we want some additional flavours that is!

That’s it. We like it because of it’s simplicity and purity. And we like it because of the amazing quality of kombucha that it produces.

We don’t use artificial additives or flavours and we don’t like adding juices at the end of fermentation or in a secondary fermentation process. In fact we don’t back sweeten or flavour at all. We always ferment everything in our primary fermentation.

Where are we on sugar and artificial sweeteners and calories. Well we prefer sugar to any artificial sweeteners. We don’t ever use these chemical ingredients. Our finished products are all in the low calorie category. Typically we have a round 3 g sugar in 100 ml, giving less than 50 kcal per serving.

Our Process

We are proud to be hand crafting a premium artisan product. We have six simple steps in our process.

  1. Brew a tea infusion
  2. Add the sugar for the fermentation energy
  3. Combine with kombucha starter SCOBY
  4. Ferment for 2 – 4 weeks
  5. Condition and filter
  6. Bottle

Our Flavours & Other Magic

If we follow such strict production principles, where do our flavours and other magic come from. From lots of places. We can vary the tea, the sugar (see below), the starter, the brewing conditions, the conditioning (currently we are loving experimenting with some lovely wine making practices). We can be creative with our tea infusions and here we add other carefully selected botanicals in our brews. Also quite uniquely to us, one of the ways we vary our energy for the SCOBY is by substituting beet sugar for fruit sugar. We don’t use juice at the end of the process. We never back sweeten or flavour with juices, instead we bring in sugar from fruits, usually as concentrated juice as energy sources for the SCOBY. While this gives some practical difficulties we think it’s worth it to be true to the brewing principles. As a nice side-effect we get the essence of the flavour from the sugar source. Sweet!

What’s different about kombucha & sparkling tea?

We love the yin and yang of the canine and feline personalities of our two product lines. In both we seek to lead with quality tea. In one our fermented tang and sourness is a the fore and in the other we seek to express the true the nature of the tea and bring mellow and smooth flavours. We love the love the complementary and symbiotic nature of this product.

The Bucha’s Dog

The Bucha’s Dog kombucha is our original fermented tea product line. Our award winning bucha has been gaining popularity in our home town of Belfast and further afield for a little while now. We continue to brew and refine our original products and bring new & innovative flavours to market. Kombcucha is a delicious and nourishing fermented food (drink) that is full of goodness such as beneficial bacteria, healthy organic acids (like apple cider vinegar), enzymes, vitamins and antioxidants. Some of these come from the wonderful teas and other botanicals we infuse and some come from the activity of the beneficial microbes that work so hard for us in our ferments.

The Craft Tea Cat

The Craft Tea Cat is our feline alter ego line of cold brewed sparkling tea. We realised that not everyone is into the funkiness of fermentation drinks and have crafted something a little different. And there are times when you just want a tea. Since we love tea, with the Craft Tea Cat products we can highlight much more of the flavour, versatility and quality of the tea itself. We’ve already received an award for innovation with this product line and look forward to developing the recipes we have in store.
